You gotta have one of those cool pans. If you don't you can use this same batter and make funnel cakes. This one is my favorite, Doug.

Ingredients
- 2 cups buttermilk
- 2 cups flour
- 3 eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tbsp sugar

In a bowl beat 3 egg yolks, add sugar salt and buttermilk.

Sift together flour, soda and baking powder, add to mixture.

Add stiffly beaten egg whites, fold in until smooth. DO NOT USE ELECTRIC MIXER. Softly fold the egg whites in, be gentle with it. If you don't, it will ruin them and they'll be too dense.

Using 1 tsp oil or shortening in each little cup, fry in an ebleskiever pan, turning each one when it begins to pull away from the sides.

Use medium heat and they will fluff up and turn a beautiful golden brown. Turn with a long wooden shish-ka-bob stick.

Coat with butter, sprinkle with powdered sugar or maple syrup, jelly or whatever you like. (*Ebleskiever Syrup recipe*)
